The shape of the knife is specifically intended for chopping vegetables. It has a long flat blade designed to come into full contact with the cutting board with each stroke and create clean cuts of each vegetable. The deep blade will make easy work of heavy vegetables such as sweet potato, squashes and beetroot. The front of the blade has a slight upward curve for slicing and dicing vegetables.
As a fully forged knife the GF36 has the same blade as the G5, but is made from one piece of steel from the knife point to the end of the handle and contains a full tang. It feels substantially heavier and has a lot more presence that the G5.
Made from forged CROMOVA 18 stainless steel, specially developed by GLOBAL as it holds a razor-sharp edge and resists rust, stains and corrosion. Ice tempered and hardened to Rockwell C56-58, each knife is carefully weighted by filling the handles with sand to achieve the optimum weight and perfect balance. Other unique features include its smooth contours and seamless construction which eliminates food and dirt traps offering the ultimate in safety and hygiene. The acute 15-degree angle cutting edge provides unsurpassed performance and superior edge retention.
From its modest inception, GLOBAL has developed into one of the most successful brands of professional kitchen knives in the world. Still crafted by hand in Yoshikin’s factory in Niigata, Japan, GLOBAL knives are manufactured to extremely high and exacting standards using the best raw materials available.
Like the Samurai swords, each knife is carefully weighed to ensure the perfect balance. GLOBAL has attracted much over the years and received numerous awards. GLOBAL knives are made from the finest stainless-steel material. The blades utilise CROMOVA 18 Stainless Steel, which has been designed exclusively for Global knives, ice tempered and hardened to Rockwell C56- 58 which holds a razor-sharp edge longer than any other steel and resists rust, stains and corrosion. This steel is hard enough for Global knives to hold that steep acute cutting edge for a long time, yet soft enough so that it is not too difficult to sharpen. Care should be taken to keep your Global knives stain and rust free.
